Easy Enchiladas (My Version)

This recipe is very easy and tasty!

  • 1 lb. ground beef, ground turkey, or shredded chicken
  • seasoning
  • 12 corn tortillas
  • 1 can enchilada sauce
  • 1 cup shredded cheddar cheese (more if you want to make plain cheese enchiladas)
  • Large pan and enough oil to cover 1/4 inch on bottom
  • (Optional: 1/3 cup finely chopped onion)
Prepare meat.  Mix with choice of seasoning mix (Taco seasoning is best for ground beef and turkey).  Once cooked through, set aside.  Heat oil in large pan.  Soften corn tortillas in hot oil by quickly dipping both sides.  (This will take only a few seconds).  Place tortillas on a paper towel to drain.  Top each tortilla with the meat and then cheese (or cheese with a sprinkle of onion).  Tri fold and place the fold down in a 9x13 pan.  Once the pan is full, pour the can of enchilada sauce on top and sprinkle with remaining cheese.  Bake at 350 degrees for 20-25 minutes. Cheese should be melted and the sauce bubbly.  Makes 12 enchiladas.
